La Pavoni Options

I bought a La Pavoni Europiccola a couple of weeks ago and have been experimenting with it since. I haven't yet purchased a grinder so have been using shop bought pre-ground coffee, some of which is ok but the best in terms of taste seems to be one from Whittards which they grind for you in the shop. What I can't get is any crema. Have tried different amounts of coffee and different pressure when tamping but nothing seems to make any appreciable difference. Would I be right in thinking the grind may be too coarse? Water does flow through very quickly after lifting the lever, maybe 2-3 seconds and it is a flow rather than a drip.

Any advice appreciated.

Hi Oli

Your coffee is definitely ground too coarse, ask your coffee supplier to grind for espresso, you should be looking for an extraction time of 20-25 seconds for a shot of coffee, when you get the grind of the beans right the crema will come, try and get the freshest coffee that you possibly can, I roast my own beans and I find that the best taste and crema always comes from 3-7 days roasted beans.
